Homemade Jalebi Recipe Step By Step

Jalebi is a dessert of sub-continental origins and is enjoyed during a variety of events including but not limited to weddings, parties, birthdays etc. An easy to follow step-by-step recipe is given below.

Ingredients:
1. White Sugar (2 cups)
2. Green Cardamom ( 3 pods)
3. Lemon Juice (1 Teaspoon)
4. Water (3 cups)
5. All Purpose Flour (2 cups)
6. Cooking Oil ( 2 Tablespoon)
7. Plain Yogurt ( 4 Tablespoon)
8. Baking Powder ( 1.5 Teaspoon)
9. Food Color Powder Orange/Yellow ( 1 Teaspoon)
10. Desi Ghee (3 Tablespoon)

Method:
Preparing Sugar Syrup
1. Take a sauce pan and pour water (3 cups) and sugar (2 cups) in it. Now add cardamom (3 pods) in it and turn on the stove setting it to medium flame. Bring it to boil and stir intermittently until all the sugar is dissolved.
2. Then set the stove to low heat and add lemon juice (1 teaspoon) to avoid sugar crystallization.
3. Keep cooking till you get one string consistency of sugar syrup. A picture is given below for reference. Turn off the flame and cover for now.

Preparing Batter

1. In a bowl, add the following ingredients: all purpose flour (2 cups), cooking oil (2 tbsp), plain yogurt (4 tbsp), baking powder (1.5 tsp), yellow or orange food color powder ( 1 tsp).
2. Mix all these ingredients with the help of a spoon.
3. Now add water gradually into this mixture. Pour little water and beat well clearing all lumps. Add more water if required.
4. Whisk the mixture well till the batter becomes smooth. The batter should not be too runny or thick. Watch the video below to know the consistency of batter.



5. Pour the batter into a polythene bag or an empty plastic ketchup bottle with a nozzle.

Frying Jalebi

1. Take a deep frying pan and add oil to get a depth of 1.5 inches from the bottom of pan. Add desi ghee (3 tbsp) to it. Flame should be medium.
2. Wait till the oil becomes hot. Pour batter in hot oil with help of a polythene bag making round spirals. You can get creative and make other shapes too but make sure they are not too big to be dipped in sugar syrup.
3. When one side is slightly fried, turn over and fry the other side equally. Avoid over cooking and make sure they do not turn brown.
4. Fry Jalebi till they are light golden in color. Remove them and drain excess oil.
5. Now dip them in warm sugar syrup prepared earlier. Flip them over and dip other side too. Dip for 2-3 minutes. Take them out and shake to remove excess syrup.
6. Make sure that syrup is warm. But turn off stove before dipping Jalebi.
7. Jalebi is ready. Serve warm and enjoy!
