Shami Kabab Recipe

Shami kebabs are one of the most consumed kebabs around the world. It is a blend of chana dal (yellow split peas) and meat. For this recipe, we have used chicken meat. Read on for the recipe. 


Fried Shami Kebabs


Ingredients
1. Chana Dal (Yellow Split Peas, 500 grams)
2. Boneless Chicken (750 grams)
3. Ginger ( 3 inch piece )
4. Black Cardamom ( 4 pods )
5. Cinnamon ( 4 pieces, each 2 inches long)
6. White Cumin Seeds ( 2 Tablespoons)
7. Salt ( according to taste )
8. Red Chili Powder ( according to taste )
9. Onion ( 1 medium, minced)
10. Eggs (2 raw)

1.5 - 2 hours


Serving Size
20-30 kebabs 


Method 
1. Wash chana dal (yellow split peas ) thoroughly and soak them in a bowl of water for 30 minutes. 

2. In the meantime, boil the boneless chicken over medium heat in sauce pan. Add ginger, black cardamom, cinnamon, white cumin seeds, salt and red chili powder in the mentioned quantities. 

3. Cook chicken for 20-25 minutes on medium-low heat. Once the chicken is cooked well, turn off the stove and wait for it to cool down a bit. 

4. Take the chicken out of the sauce pan in bowl or plate. Keep all the spices and herbs in sauce pan and add more water in it to boil chana dal (split peas) in it. Add Chana dal ( split peas ) in it and boil for 25-30 minutes over medium heat. 

5. When the split peas are completely cooked and have become soft, increase the flame and evaporate the remaining water. When done, turn the stove off. 

6. Now add the boiled chicken back into the sauce pan and mix well. 

7. Remove ginger, black cardamoms and cinnamon from the sauce pan. 

8. Crush the prepared mixture of chicken and chana dal using mortar and pestle. Emphasize more crushing on split peas. 

9. When done, add minced onions and 2 raw eggs in it and mix well. You can taste this mixture for salt and chili. Add if needed.

10. Now make kebabs of this mixture. Choose size according to your liking. 

11. When done, store them in the freezer in a tightly sealed box or aluminum foil. 

12. You can keep them frozen for a month but always look for signs of staleness before use.
