We are all more or less familiar with the famous Chinese rice. Singaporean rice may be considered as a tasteful variant of Chinese cuisine. A perfect healthy and scrumptious blend of rice noodles and chicken gravy makes it a treat for your taste buds. No doubt, the fancy name of this dish makes one wonder that it must be something unique and sweet and sour. It also includes different spices, chicken , a variety of sauces to add to the taste of this dish and makes it mouthwatering and juicy. This dish has 3 integral layers. The first layer is of boiled rice with touch of soy sauce. The second layer includes egg noodles prepared with a variety of spices and vegetables. And a final third layer is of chicken gravy.

Singaporean Rice Recipe






Ingredients:
1. Rice ( 1 1/4 Mug, boiled)
2. Egg Noodles (230 gm, boiled)
3. Chicken Boneless (500 gram, raw, cubes)
4. Carrots ( 3 medium, thinly sliced)
5. Capsicum ( 2 medium, thinly sliced)
6. Green Onions (1 cup, whites and greens combined, chopped)
7. Soy Sauce ( 10 Tbsp)
8. Salt ( To taste)
9. Red Chili Sauce (4 Tbsp. or according to taste)
10. Black Pepper Powder ( 1 Tsp)
11. Garlic Powder (1 Tsp)
12. Yogurt (2 Tbsp.)
13. Vinegar ( 1 Tbsp)
14. Corn flour ( 1 Tbsp)
15. Chili Garlic Sauce ( 6 Tbsp )
16. Cooking Oil ( 1/2 cup )
17. Red Onions (1 large, small cubes)
18. Tomato ( 1 medium, finely chopped)
19. Mayonnaise (3 Tbsp)

Method
1. Take a large mixing bowl and add boneless chicken cubes in it for marination. Add salt (1/2 Tsp), garlic powder (1/2 tsp), vinegar (1 Tbsp), corn flour (1 Tbsp) and yogurt (2 Tbsp) in it and mix well. Refrigerate for 30 mins. 

2. Take a sauce pan turn the flame to medium-low. Add 4 tablespoons of cooking oil in it. Add whites of green onions and fry them for 2 mins. Now add half quantity of carrots (thinly sliced) and fry on medium flame for another 3 mins. Now throw in salt (to your taste), black pepper powder ( 1/2 Tsp), soy sauce (3 Tbsp), red chili sauce (2 Tbsp) and mix well. 

3. Now add boiled egg noodles into this mixture. Make sure the flame is set to medium-low. Keep mixing until a uniform distribution is achieved. Cook for 3 mins and sprinkle the greens of green onions evenly into this mixture. Cover the lid and let it cook for 2 mins only. When done, turn off the flame and set aside. Your egg noodles are ready now. 

4. Take a large frying pan and pour 7 tablespoons of cooking oil in it and set flame to medium-low. Add tomatoes (finely chopped) into the pan and cover the lid. Let it cook for 2 mins. Now add water (half cup) into these tomatoes to get a pulpy texture. Again partially cover the lid and cook on low flame until the water evaporates. 

5. When done, mash the tomatoes with the help of a solid spoon. 

6. Now add red onions (cubes) in the pan and sauté until they are translucent. Now add marinated chicken cubes in it and fry for 2 mins. Add half cup of water, cover lid. Set the flame to medium-low and let it cook for 5-6 mins. 

7. After the water is evaporated and chicken is cooked, add salt (to taste), black pepper powder (1/2 Tsp), soy sauce (4 Tbsp), red chili sauce (2 Tbsp), garlic powder (1/2 Tsp) and mix well. When done, add the remaining carrots, capsicum (thinly sliced), garlic chili sauce (4 Tbsp) and 2 tablespoons of cooking oil in it. Set flame to low and cook for 2 mins. Turn off the stove and set aside. 

8. Take another frying pan and set the flame to low. Transfer the boiled rice into the pan and pour 3 tablespoons of soy sauce in it. Mix well for 2 mins and turn off the flame. Your rice are ready as well. 

9. Time to prepare our sauce. Take a mixing bowl and put 3 tablespoons of mayonnaise, 2 tablespoons of garlic chili sauce and mix well. If the sauce is too thick, you can add a small quantity of water in it.  

10. Now it is time to arrange the layers. Take large dish and make the first layer with the prepared rice. 
Spread the rice evenly in the dish. 

11.On top of the rice, spread the prepared egg noodles from step 3. Again top these 2 layers with the prepared chicken gravy from step 7. Finally pour the sauce as a final touch from step 9.
